Recipe: Summer Fresh Black Bean Mango Salsa

Do you need to impress with a great appetizer but don’t want to veer far from healthy? In this recipe, chiles and black beans are tossed with mango, citrus, onion, and yellow bell pepper for a flavorful dish with the protein to help you burn fat!

Serves:  Makes 8 servings

Prep Time: 5-10 minutes
Ingredients:
  • 1/4 cup onions, minced
  • 1 large yellow bell pepper, chopped
  • 1 mango, chopped
  • 1 lemon, juiced
  • 2 tsp parsley
  • 1 cup black beans
  • 1 cup canned tomatoes with green chilies
  • 1/4 tsp salt

Instructions:

Drain the black beans and rinse them well, then drain the tomatoes and put them in a bowl. Add in all of your other ingredients, add salt and lemon juice, then put in the fridge to chill. Once it’s cold, serve and enjoy!
