Weekly Recipe: Oven-Baked Squash Chips

Summertime cookouts are a tradition, a necessity really. But what kind of chips should you serve your guests? Do they prefer barbeque, salt & vinegar, or original? Should you purchase jalapeño or something unique? Solve your chip dilemma, stay healthy, and be creative by serving squash chips at your next cookout.

Wish squash as the only main ingredient, these chips are not only healthy, but also economical for the budget-conscious chef.

Oven-Baked Squash Chips (yields however many you want!)
·         2 small or 1 large yellow squash
·         salt

Preheat your oven to 300 degrees. Wash squash and pat dry. Slice squash as thinly as you possibly can. Spray two baking sheets with cooking spray and line with squash, being careful to keep the pieces from touching.

Sprinkle squash rounds with salt and place in oven. Allow to bake 2-3 hours, checking at the 2 hour mark. The longer you leave them in, the crispier they’ll become. Serve with your favorite dip or eat these plain!

Tip: Feel free to experiment with seasonings for some different and unique flavors.
