進行減重計劃時,我們通常只都專注在主菜,而忽略了醬汁配料。醬汁除了可以是餸菜的靈魂,也可以是致肥陷阱。今次,TLS 授証訓練員 Margaret跟我們分享一下選擇醬汁的貼士以及分享自家製醬汁食譜-紅酒醋。 作者: TLS 授証訓練員 Margaret Chan 話說我以前的飲食都很重口味,喜歡用醬汁撈飯,食粉麵是為了辣椒醬,其實理性上當然知道不健康,但是習慣了重口味,一下子改不了。 我亦觀察到好多朋友,打邊爐時會喜歡配辣椒油、沙茶醬、沙嗲醬、芝麻醬等,不但高脂又高鹽份,什至很多茶餐廳的醬汁,主要成份是用油和麵粉,到處都是致肥陷阱。 排毒是一個最有效的方法,去甩掉重口味,回歸食物的真味;很多朋友聽到排毒,很怕沒東西吃,亦怕菜式淡而無味,其實花點心思,排毒可以好好味。 今日跟大家分享一個簡單醬汁(請看圖)無論是食沙律時當醬汁,還是食煮熟青菜作為調味,都同樣提升食物鮮味。至於選擇紅酒醋,我會選擇酸味淡口一點的,不會搶去食物的原味,注意一下市面有一些加了糖漿,少吃為妙,我個人會推介夥伴商店「源生坊」所買到的紅酒醋,大家可以整好一瓶,放冰箱隨時備用。
