Recipe: Healthy Chicken-Vegetable Bowl

Healthy Chicken-Vegetable Bowl

Serves: 2

Cooking time: 45 minutes

 

Ingredients:

  • 1-1½ cups cooked brown rice or quinoa
  • 6 oz cooked skinless chicken breast, shredded or cubed
  • 1 cup cooked broccoli
  • ¾ cup sautéed spinach
  • 1/2 cup shredded or cubed carrot
  • 2 Tbsp. toasted slivered almonds
  • 4 Tbsp. vinegar and oil dressing

 

Directions:

  1. Divide the rice, chicken, and vegetables evenly between 2 bowls. Sprinkle each bowl with 1 Tbsp. almonds.
    2. Drizzle each bowl with 2 Tbsp. dressing.
