Recipe: Veggie Egg Muffin

We know that breakfast is very important. But, tight schedules mean many of us tend to skip breakfast, paving the way to unhealthy on-the-go food choices. Below is a simple egg muffin recipe that is great for busy morning or afternoon snacks!  You can save time in the morning by preparing the ingredients the night before!

Serves: Makes 6 servings

Prep Time: 25 Minutes

Ingredients: 

  • 6 large eggs
  • 1 Tbsp chopped onion
  • ¼ Cup diced tomato
  • ¼ Cup diced mushroom
  • ¼ Cup chopped spinach or broccoli
  • Dash of minced basil
  • Salt and pepper to taste

Methods:

  • Preheat oven to 180°C. Spray a thin layer of oil on muffin tin.
  • In a bowl, beat eggs. Whisk together with basil, salt and pepper.
  • Put egg mixture in each muffin tin equally.
  • Spoon vegetable mix evenly into each muffin cups.
  • Bake in oven for 15 minutes or until egg mixture sets.
  • Serve hot + enjoy!

The ingredients in this recipe are flexible; you can substitute different vegetables depending on what’s fresh + available near you! Grab a piece of whole grain toast + you’ve got a quick, nutritious meal!

 食譜-蔬菜焗蛋

我們都知道早餐對我們來說很重要,但有時候我們難免因為時間緊張,而選擇不食早餐或選擇一些不健康的速食快餐。以下是一個簡單易做的雞蛋食譜,非常適合繁忙的早上製作或作下午茶點!你亦可以在前一天晚上把食材準備好,這樣能在早上節省更多時間! 這個食譜中的食材可以隨意轉換,加入你最喜歡的蔬菜亦可以。再配合一塊全麥麵包及一杯脫脂奶,就是一個營養豐富的早餐了!

 

份量:6份焗蛋

預備時間:10 分鐘

烘焙時間:15分鐘

 

材料:

 

  • 6個大雞蛋
  • 1湯匙切碎洋蔥
  • ¼杯切粒番茄
  • ¼杯切粒蘑菇
  • ¼杯切碎的菠菜或西蘭花
  • 少許羅勒碎
  • 鹽和胡椒粉調味

做法:

 

1)將焗爐預熱至攝氏180度。 在鬆餅焗盤上噴一層薄油。

2)在一個碗裡,發打雞蛋。加入與羅勒,鹽和胡椒,攪拌。

3)將雞蛋混合物均勻地倒入每個鬆餅杯。

4)將準備好的蔬菜均勻地倒入每個鬆餅杯中。

5)放入焗爐焗15分鐘或直到蛋凝固。

6)熱食。
