Recipe: Hearty, Healthy Chinese Winter Melon Soup

Are you craving something hearty and chunky to warm your stomach this winter? As tempting as it is to grab a can of soup, the sodium and unhealthy fats that are loaded in knock them to the bottom of our grocery list. Instead, try this winter soup recipe you can make at home!

Serves: Makes 4 servings

Prep Time: 45 mins


  • 17.5 oz Winter Melon
  • 14 oz Boneless, Skinless Chicken Breast
  • ½ can of corn kernels
  • 2 stalks of celery
  • 1 carrot
  • 5 cup water
  • 2 tsp black pepper
  • 1 tsp salt
  • 5 (10g) slices of ginger root
  • 1 stalk of scallions (optional)


  • Bring a pot of water to boil
  • Meanwhile, rinse and remove any visible fat from chicken breast.
  • Place chicken breast in boiling water, cook until tender.
  • Drain water then use forks to shred chicken breast into small strands.
  • Cut winter melon into chunks, then a use grater to shred it.
  • Drain corn kernels, then dice celery and carrot.
  • In a pot, boil 5 cups of water.
  • Place shredded chicken, winter melon, carrots, celery, and spices.
  • Cover and cook for 10 to 15 minutes over medium heat or cook until winter melon become soft.
  • Serve hot, sprinkle with chopped scallion

4)在湯煲裡,把5杯份量的水煮滾。 加入雞絲、冬瓜、紅蘿蔔、西芹及所有調味料和香料。用中火煮10至15分鐘,或煮至冬瓜絲煮至軟身成蓉。
